Let Them Eat Cake - The Wedding Cake

The wedding cake tradition is far older than many of you may even believe. In fact, the first “wedding cakes” date as far back as the Roman Times, when the groom broke bread over the bride's head. This used to symbolize the end of the bride's purity, as well as the beginning of her being submissive to her husband.


Today, we eat cake for purely indulgence! Wedding cakes are enjoyed by the bridal couple and guests, where the sky is the limit to the endless possibilities and styles that exist.



We asked Cecile from Cecile Sweets & Design in Mougins on the French Riviera to share her advice on all you need to know about wedding cakes.


1 | What are the choices for making a wedding cake?  

A wedding cake is not a "basic"cake as you might think. It represents all the complexity of a the art of "true patisserie."

Composed of a cake base, filling and topping, a whole range of flavours and texture combinations are possible and made as you wish under the expert advice of your cake designer.

It is good to note that the design of your cake must be carefully considered so that it can remain at room temperature and be exposed for your guests to be admired and becomes a real center piece at your wedding.


2 | What constitutes your cakes


As beautiful as it is good...

I work with a light and delicate meringue cream, a delicious chocolate ganache or stay with the freshness of a fruit curd. The choice of the cake itself is also important with the association of flavours. Some all-time favourites are Molly Cake, Red Velvet, Lemon Cake, Devil's food cake...



For even more indulgence you can add tasty toppings such as:


  • Puff pastry: for a crispy effect in ganaches

  • Chocolate chip: dark, milk, white, ruby ​

  • Crunchy: with sprinkled Nougat, Praline, Caramel

  • Fruits: fresh (depending on season), syrup, dried, candied, amarena (cherry)



3 | Can you make flowers out of sugar  

Yes, everything is possible. Flowers and various shapes made from sugar paste is possible. The customisation is entirely up to you, so that it is an integral part of your wedding theme. 


4 | How far in advance will my wedding cake be prepared?  

Depending on the complexity of certain decorative elements, these can be made a good week before the date of your wedding.


As regards to the cake, baking will begin 4 - 5 days before your wedding to preserve all its freshness!

5 | Who will make my wedding cake

I take care to personally make all my creations, these are 100% handmade in a traditional way.


6 | What is the price of a wedding cake

In general, the minimum is € 10 a piece for a high quality cake. It is very important to communicate with the bride and groom to study their project and refine the budget to the be fair in terms of needs, and this is why I like to work my custom pastries.


7 | Does the price of the wedding cake include the next tier?  

Cakes are generally charged per piece, a price which will be evaluated according to the desired decoration and the difficulty of execution.

You can also add “dummy” levels which will be billed according to their size and decoration.


8 | Cake traditions in France  

The"Pièce montée en choux" are one of the favourite traditional cakes of France. They beautifully translate elegance and 'gourmandise'.


They are made up of small puffs garnished with a choice of pastry or diplomat cream (light pastry cream with whipped cream) assembled with caramel. The choice of flavours is very varied, just like the forms which can be a free choice to your imagination!

Have a tasting  

The tasting is a very important moment! It is used to materialise a project that the bridal couple and the cake designer will have worked on for several months. Finally, this long-awaited moment also reassures the couple of their choices. 


Should choosing your cake style be one of the last things you do  

It is sometimes difficult to plan. There are so many things to take into account, such as choosing your wedding theme, decoration, flowers, hairdresser, outfits, etc. The wedding cake nevertheless remains a centerpiece of this unique moment!


You must therefore find your cake designer as soon as possible because it is a question of feeling, more than the pastry chef. We are one and the same team working hand in hand to make the end of your wedding a masterpiece success. It is a moment of emotion that all your guests will remember.


You must first finalise your guest list (and the size of the space)  

It is actually preferable to have studied the potential number of guests so that the quote is as close to your needs as possible. But don't worry, you can modify it if necessary by simply respecting the deadlines to do so and which are mentioned in the general conditions of sale set up at the signing of your contract.


Where can cost be saved

Savings should not be made on the quality of the cake which could alter the tasting, but must be consistent with your budget. The choice falls down to your choice of decoration, off-season products and accessories which may be expensive. 


Choose the right frosting  

A wedding cake offers endless possibilities! You can cover it with sugar paste to create a decor according to your desires, but you can also prefer the "nude" side a cake just covered with a light cream colour or without, for those who do not particularly like the sugarpaste.
